Mexican beef and rice skillet is a tasty one-pot dish made with ground beef, rice, and classic Mexican-inspired ingredients such as beans, tomatoes, and spices. I

Notes

Ingredients:

  • 1 tablespoon of olive oil.
  • 1 large onion chopped.
  • 2 cloves garlic minced.
  • 1 pound ground beef.
  • 1 red pepper diced.
  • 1 yellow pepper diced.
  • 1 tablespoon tomato paste.
  • 1 tablespoon taco seasoning.
  • Salt & pepper to taste.
  • 1 cup parboiled rice.
  • 1 and a half cups broth.
  • 1 jar of chunky salsa.
  • 1 can black beans.
  • 1 cup sweet corn canned or frozen.
  • Shredded cheese, lime wedges, sour cream, chopped tomatoes, cilantro, avocado, tortilla chips….

Instructions:

  1. In a pan, heat oil over medium-high heat. Cook onion for 2 minutes, then add garlic and beef, browning meat. Add diced peppers and cook for 1 minute.
  2. Add ingredients
  3. Stir in tomato paste, taco seasoning, salt and pepper. Add rice, broth, salsa, beans, and corn, stirring well.
  4. Simmer, covered, over low heat for 15 minutes, adding broth if required.
  5. Top with cheese, cover for 2 minutes to melt and serve with toppings.
