Ingredients:
- 1 tablespoon of olive oil.
- 1 large onion chopped.
- 2 cloves garlic minced.
- 1 pound ground beef.
- 1 red pepper diced.
- 1 yellow pepper diced.
- 1 tablespoon tomato paste.
- 1 tablespoon taco seasoning.
- Salt & pepper to taste.
- 1 cup parboiled rice.
- 1 and a half cups broth.
- 1 jar of chunky salsa.
- 1 can black beans.
- 1 cup sweet corn canned or frozen.
- Shredded cheese, lime wedges, sour cream, chopped tomatoes, cilantro, avocado, tortilla chips….
Instructions:
- In a pan, heat oil over medium-high heat. Cook onion for 2 minutes, then add garlic and beef, browning meat. Add diced peppers and cook for 1 minute.
- Add ingredients
- Stir in tomato paste, taco seasoning, salt and pepper. Add rice, broth, salsa, beans, and corn, stirring well.
- Simmer, covered, over low heat for 15 minutes, adding broth if required.
- Top with cheese, cover for 2 minutes to melt and serve with toppings.
