Ingredients:

  • 1 box of strawberry cake mix.
  • 1 cup of fresh and diced strawberries.
  • 8 oz softened cream cheese.
  • ½ cup of unsalted melted butter.
  • 2 cups of powdered sugar.
  • 1 teaspoon of vanilla extract.
  • ½ cups of shredded coconut (optional).
  • ½ cups of chopped pecans or walnuts (optional).

Instructions:

  1. Preheat the oven:
  • Preheat the oven to 350 °F (175 °C). Apply grease to a 9x13-inch baking dish.
  1. Layer the ingredients:
  • Spread the shredded coconut and chopped walnuts evenly over the bottom of the prepared pan.
  • Follow the instructions on the packet to prepare the strawberry cake batter, then pour the batter over the coconut and nuts.
  1. Bake the cake:
  • Place in the preheated oven and bake for 40 to 45 minutes, or until set and golden on top. The cake will show cracks and indentations, giving it an “earthquake” appearance.
  1. Serve:
  • Leave the cake to cool slightly before slicing. Serve warm or at room temperature, garnished with sliced fresh strawberries if desired.
