Cheesesteak Tortellini in Rich Provolone Sauce is an easy-to-make, filling dish based on beef, vegetables, and cheese.

Ingredients
For tortellini :
- 1 cheese tortellini package (20 oz.).
- 1 tablespoon of olive oil.
- 1 lb. thin beef strips.
- 1 chopped green bell pepper.
- 1 chopped onion.
- 2 minced garlic cloves.
For the sauce :
- 2 tablespoons butter.
- 2 tablespoons plain flour.
- 2 cups whole milk
- ½ cups grated provolone cheese.
- ½ cups grated parmesan cheese.
- Pepper and salt to taste.
Instructions:
Prepare the tortellini:
- Prepare the tortellini to be ready for cooking following the package instructions.
Follow with the beef & vegetables:
- Warm the olive oil in a large frying pan over medium-high heat, then add the sliced beef and cook until it changes color and - turns brown. Lift from the frying pan and allow to rest.
- Chop the bell pepper, onion and minced garlic, add them to the same frying pan. Cook until the vegetables get soft. Lift from the pan after 5 to 7 minutes and set aside with the beef.
the provolone sauce:
- Butter: Using a separate pan, melt the butter over medium heat.
- Roux: To form a roux, whisk the flour and cook for 1 minute.
- Milk: Grab a whole milk, and whisk it a little at a time until it bubbles.
- Cheese: Mix the grated provolone cheese and parmesan until melted. Season with salt and pepper until it reaches the desired level of flavor.
Blend the mixture & serve:
- Put the cooked tortellini, beef and vegetables into the cheese sauce. Delicately stir to blend well.
- Place the cheese tortellini to a serving plate. Preferably warm.
