What is Pistachio Butter?

  Pistachio Butter is made with toasted pistachios, it’s creamy and has a dreamy taste of pistachio’s flavor. You can try it with morning toast or with your batch of pancakes, it makes it taste extra delicious. Pistachio Butter

Ingredients : 

  • 2 to 3 ½ cups or 9 to 16 ounces raw shelled pistachios .
  • Pinch or more salt, to taste.

Instructions : 

  1. Preheat the oven to 350°F. Place the pistachios on a rimmed baking sheet and toast them for 7 to 9 minutes, stirring halfway through, until they become aromatic.
  2. Let the pistachios cool for about 10 minutes, or until they are no longer hot but still slightly warm.
  3. Place the pistachios in a food processor and add a pinch of salt.
  4. Blend the pistachios until the mixture is smooth and creamy, stopping occasionally to scrape down the sides. The texture will change from crumbly and flour-like to a ball against the side of the processor, and finally become silky and glossy. If the mixture gets too warm or your food processor starts to struggle, take a break and let it cool for a few minutes before continuing.
  5. Taste, then add another pinch of salt if needed. Let the Pistachio Butter cool to room temperature, then transfer it to a mason jar and seal with the lid. This nut butter can be stored at room temperature for up to 1 week, or kept in the refrigerator for up to 1 month.

  • Buy the raw, unsalted, shelled pistachios for better results:

     Raw pistachios are far superior to pre-toasted ones in both quality and flavor, which is why we will toast them ourselves to help with the blending process. It’s also important to use Unsalted pistachios, as store-bought nuts are often overly salted. Opting for pre-shelled pistachios will save you a huge amount of time—there’s no way I’d want to crack enough pistachios to make a whole batch of butter!

  • Toast the nuts right before blending:

You’ll find the details in the recipe. Freshly toasted nuts don’t only taste amazing, but they also add more depth of flavor to the end result. Plus, warm nuts are much easier to blend than cold ones, making the process easier.

  • Use a food processor, not a blender:

When it comes to nut butters, it’s better to use the food processor. Nut butters are so thick for blenders, even great ones.  It’s much simpler to just throw the nuts in the food processor and let it do all the work.

  • Adding oil:

While pistachios contain their own natural oils, adding a little extra oil can help achieve a smoother texture if needed. Consider using a neutral oil like grapeseed oil or coconut oil. Alternatively, you can use pistachio oil for a richer, more intense pistachio flavor.

  • Know when to take a pause:

Making nut butter can be tough on your food processor! If it starts to feel too warm or sounds like it’s working too hard, take a break. Let the machine cool down for about five minutes before continuing.

  • Feel free to get creative! 

I think this pistachio butter is perfect with just freshly toasted pistachios and a pinch of salt. You can customize it by adding a touch of ground cinnamon and/or maple syrup at the end of blending, adjusting to taste.

    For a Crunchy Pistachio Butter, set aside about 1/2 cup of the toasted pistachios before blending the rest. Once the mixture is smooth, add the reserved pistachios and blend briefly until you reach your preferred texture.
